Why Not?

I really think it's time I broke down and bought a plunger.

Time for coffee. Then off to gym. Why hasn't someone come up with a way to make the gym not so boring? That's the million dollar question.
This whole being unemployed thing has left me with a lot of extra free time on my hands. So, why not cook? Here's what I'm baking today:

Lemon Bars

Ingredients:

  • 2 sticks (8 ounces) butter
  • 2 cups flour
  • 1/2 cup confectioners' sugar
  • 4 beaten eggs
  • 2 cups sugar
  • 4 tablespoons flour
  • 1/4 cup lemon juice
  • 1 tablespoon finely grated lemon peel
  • sifted confectioners' sugar

Preparation:

Heat oven to 325°. Blend butter, 2 cups flour and 1/2 cup confectioners' sugar. Pat into ungreased 13x9x2-inch pan. Bake for 18 to 20 minutes. For filling, blend together eggs, sugar, 4 tablespoons flour, lemon juice, and lemon peel. Pour over first layer. Return to oven and bake at 325° for 20 minutes. Loosen around edges, cut into bars and sift confectioners' sugar over the top while warm.

Money saving tip of the day: Make your own ringtones in itunes!
Select the mp3 you want>file>get info>options>set start and stop time (usually under 30 secs)>ok
Then under "advanced" menu>create mp3 version
Ba boom. you now have a custom ringtone for free. Just remember to change the original track start and stop times back to the full length so you're not listening to your ipod and wondering why some of your tracks are only 30 seconds long.
